iLoveToBake #8: Banana Muffins and Muffinettes

I’m bored and I don’t know what to do. Most of the time, I just sit in front of my laptop and stare at it. So after logging out from work and to make the most out of my free time, I decided to bake muffins but not the usual big muffins. 
 
If cupcakes are the smaller version of cakes, now I have MUFFINETTES as smaller version of muffins.
To make it a healthier treat, I used Muscovado sugar, honey and a little of white sugar as sweeteners. Using the same cashew banana batter, I added some choco chips to make it extra sweet.

iLoveToBake #7: Project #4: Cars-themed Cupcakes

A week after my Hello Kitty project, here comes my Car-themed cupcakes. God is so good! It was the same neighbor who ordered the blue + yellow boxes of brownies for her son’s christening. Before ordering, she requested me to bake some carrot cupcakes for a taste test. Luckily, she liked my creations and finally asked me to bake120 pieces of cupcakes for her son's 1st birthday party. I told her that I added apples in it so I guess we can call it Apple – Carrot cupcakes.
So presenting to you guys my cars-themed cupcakes.
Cars - just take it literally :p

Downside: there's a tendency that cupcakes may fall especially when they're heavy. Better put some tapes to stick the base with the cover.

It’s so nice to hear people say that my cakes taste good especially kids! The neighbor also told me that her relatives enjoyed it too. It’s not too sweet and the flavor of apple and bits of carrots were evident.

iLoveToBake #6: Project #3: Hello Kitty - themed cupcakes

Hi friends! It’s been almost a month since I last created a post on this blog. I have lots of pending travel and food posts but as always, I'm too lazy to blog about it. :p
I’ve been so blessed this April to close two birthday deals to two of my friends. Both were really challenging and time consuming. But who cares? I love what I'm doing and I'm happy stressing myself when baking. Every time I have orders, I always have sleepless nights since I have a regular office work. But after seeing my work, all the hardships are worth it – definitely priceless!
Without further ado, I’m presenting to you my latest creation - Hello Kitty - themed cupcakes.
My dear friend Cherrie asked me to create 80 cupcakes for her daughter’s 1st birthday party. It was a long notice that’s why I had all the time to research and think of how my cupcake will look like. Je even tag a picture in FB to give me an idea of what I should do. Unfortunately, I was just able to do these:
Chocolate cupcake with pink cream cheese frosting 
topped with hello kitty made of fondant
Cherrie likes it. She said it’s cute and asked me how was I able to do it. Thanks to the hello kitty cutters that made my work easier. The cutter created holes for the eyes, nose and whiskers. I just put some black and yellow fondant on those holes. 
By the way, Boyps volunteered to help me in this project. Hihi basta fondant, maasahan siya. :p

iLoveToBake #4: Macaroons, Crinkles and Nips Cookies
FTFBadge Every Monday and Wednesday, I work from home instead of travelling 1.5 hours going to our office in Pasay. That's the bestest privilege I got from my current employer. I’m trying my best to log-in early so I can finish work early and eventually log-out after 8 working hours. The remaining hours of my afternoon will be devoted to what I really love doing, and that is baking. J
So here are the new additions to what My Sweets’ Haven offer that will surely add sweetness to your day – Cutie chewy macaroons, Chocolate Crinkles and Rainbow Oatmeal Cookies.
I called the macaroons cute because it was smaller than usual, and chewy simply because it’s chewy on the outside but moist and soft inside.
The chocolate crinkles have a little crunch on the outside, moist and chocolatey inside.
Rainbow oatmeal cookies have the same cookie dough I use in making choco chip cookies. But instead of putting choco chips, I pour a lot of colorful nips. Wanna know what happen to my bag of nips? :p

iLoveToBake #3: Project #1: Brownies Giveaways
I never had any major project since I opened My Sweets’ Haven. There are friends who trusted me and order items in bulk but mostly were Christmas giveaways, desserts in team gatherings or simply pasalubong to their families. So when someone asked me to create 30 boxes of assorted brownies as giveaway to her son’s christening, I immediately said yes. I know it is few to be called a project but this is the first time that people "outside my comfort zone" are going to eat my treats.
My friends know how shy I am about my craft. I was never confident with what I bake even if there are people saying that my creations actually taste good, kulang lang sa presentation. So here’s how my 1st project looked like:
Blue + Yellow
The cake is from Estrel's 
The blue boxes were quite tall since the size I wanted was not available in the market so to make my brownies look a bit tall, I created brownie-cupcakes. It has S’mores, chocolate, rocky road and choco crispies flavors. I tied the boxes with yellow ribbon to follow the motif and at the same time, to hold the cover from the base without using any tapes.
After a neighbor saw my brownies, she ordered 20+ boxes for a family gathering and another 32 boxes as Christmas gift to friends.
She requested to pack the brownies in gold and tangerine. This time, I was able to use the correct size of the box so I made my brownies back to squares.

I used gold-colored boxes and decorated it with orange ribbons and tied it using a gold garter with tags.

I had fun doing all these things while still working as a professional – thanks to my work-from-home privilege. Hihi.
I just hope that someday, I could be a supplier to birthday party or to a not-so-huge event. J

ILoveToBake #2: Sweets’ Haven's Carrot Cupcake
Last November 11, my sister’s son turned 1 month old. Together with her husband’s family, we celebrated his “monthly birthday” at their house. Now I have a reason to bake and use my just recently purchased cupcake topper – carrot topping made of royal icing. I’m a frequent client of Sweet Craft and I got attracted with this cute carrot topper so I ended up buying one for myself. Hihi.
Presenting to you guys my Chocolate Carrot Cupcake. It’s a cupcake with carrot and apple base topped with chocolate ganache and decorated with the carrot candy. Actually, I wanted to create a cream cheese frosting but unfortunately, I don't have a stock of cream cheese at home. Well anyways, believe it or not, it was good. I can’t believe I was able to eat a piece because I don’t usually eat the pastries I bake. Haha.

iLovetoBake: Playing with Fondant
I'm a frustrated baker. I so love to bake even if I'm losing money buying for ingredients and let everyone eat it for free. Hihi. But it's all worth it after hearing complements, suggestions and negative reactions. Yes you read it right, because it's helping me to improve my craft.
From now on, I will be posting my creations here - it may not be as presentable and perfect enough as a customer would want (sa ngayon) but I will continue to update you with the improvements I will be making. As the saying goes, Practice makes perfect!

Cupcake #1: Thomas the train - As always, I seek help from Google as how usually a Thomas the train cupcake would like. But a friend told me that it's a fake Thomas :p Haha.
Cupcake #2: Alien of Toy Story / Shrek / Pigs from Angry birds. Haha. I find it cute but I do admit that it's not the output that I expected it to be. Boyps and I did this together. Hihi.

Molding and playing with fondant is not easy. :| I'm not an artist but I'm really trying. It's difficult, messy but fun!
